In this bar from Zotter Chocolates, milk chocolate yields to a creamy center of pink cherry mousse studded with bits of Amarena cherries. (There’s also marzipan, vanilla, and a wafer-thin layer of white chocolate.) The sum of all these layers is even greater than its parts. Austrian chocolate maker Zotter uses a “hand-scooping” method to create this rich, bright, and fruit-forward bar, a perfect pair with a hunk of Murray’s La Tur and a dollop of Divina Sour Cherry Spread.
