Murray’s Classic Mac Grilled Cheese


This might be the cheesiest grilled cheese around. We crafted this specialty Murray’s Melt using our very own Classic Mac & Cheese in place of grilled bread. The mac is cooked in a waffle iron until it’s firm and crispy, and then stuffed with a blend of three rich cheeses--fruity Tarentaise, smooth yellow cheddar, and nutty Gruyere--to create a mind-blowing cheese sandwich that’s like nothing you’ve ever tasted before.

preparation & ingredients

Nonstick cooking spray

1 Murray’s Classic Mac and Cheese, 32 oz.

1/4 lb. Spring Brook Farm Tarentaise, shredded

1/4 lb. Murray’s Cave Aged Gruyere, shredded

2 cups Ellsworth Creamery Cheddar Cheese Curds, 16 oz., roughly diced

1/4 lb. New York State Yellow Cheddar, shredded

Preheat a waffle iron and while waiting for it to come to temperature, shred the cheeses and mix together in a medium bowl.
Once the waffle iron is hot, spray both sides with non-stick cooking spray and evenly distribute enough mac to cover the bottom of the iron. If you have a mini iron, it’ll be about ¼ cup of mac. If you have a larger waffle iron that produced two or more individual waffles, it will be anywhere between 1 to 2 cups.
Close the iron and cook for 3-5 minutes until a crust develops, encasing the mac in a waffle form.
Remove from the iron and place in a 200 F oven to stay warm as you make the rest of the mac waffles.
Once all waffles are made, preheat the broiler and arrange waffles in one layer on a foil-lined baking sheet.
Place a mound of the shredded cheese mix on each waffle and broil for 2-4 minutes until the cheese is fully melted and begins to bubble and brown on top.
Remove from the broiler and press two waffles together, encasing the cheese within to make a sandwich. Slice and serve hot!
