Just Peachy Cocktail With Cheese Pairings​


In the summer, we rarely crave a cocktail that blows us away with intense flavors and sky high alcohol content. It should be crisp and cold, delicate and refreshing, and the Just Peachy Cocktail hits all those marks. Lillet and prosecco will bring a bit of buzz while keeping this a spritz that's afternoon-appropriate. A light floral flavor comes from infusing the Lillet with chamomile, a flavor that's echoed by the peach chamomile preserves. The result is a delightful summer sipper that tastes like pie in a glass.

preparation & ingredients

1 cup Lillet Blanc

1 Tbsp. loose chamomile flowers OR 1 bag chamomile tea

6 oz. prosecco

1/4 cup Quince & Apple Company Peach Chamomile Preserves

6 oz. infused Lillet

2 oz. soda water

Peach slices (for garnish)

Gorgonzola Cremificato

In a bowl or container, combine the chamomile flowers or tea bag with the Lillet Blanc and allow to cold steep for at least 24 hours. Strain and set aside.​
In a blender, add the infused Lillet and the Peach Chamomile Preserves, and blend until smooth, about 1 minute. Split this mixture between two glasses, then add ice and top with prosecco and soda water. Garnish with a slice of peach.​
