While we love so many cheeses, only a handful fall into the “keep in your fridge at all times” category. Sach’s Original Paneer is one of them. The texture of this fresh cheese is firm enough to hold together when cubed and browned, but it retains a soft, curdy bite. The fresh flavor of organic grass-fed milk shines through. When you’re not using it in classic South Asian dishes, saute it to serve in a grain bowl with Sibeiho Boomz Sambal or as a snack with Virginia Chutney Company Mango Chutney.
Organic Milk, Organic Vinegar, Sea Salt
- Paneer is a fresh cheese with origins in Northern India and Pakistan.
- It’s made by heating milk and adding an acid for coagulation (Sach uses organic vinegar).
- When the curds have formed, they’re traditionally rinsed, drained, and formed into a flat disk, then rested.
- Paneer holds up well to heat, browning beautifully and retaining its shape and texture when cooked. It works for grilling, sauteing, frying, and air-frying.
- It’s traditionally unsalted, but Sach’s version is salted. This makes it flavorful enough to enjoy on its own, while still remaining a great vehicle for sauces.
- Sach, pronounced “Such,” was founded in California in 2019 by husband-and-wife team Jasleen and Tarush Agarwal, first-generation Indian immigrants and lifelong vegetarians.
- Jasleen and Tarush were inspired to start Sach (which means honest in Hindi) after struggling to find tasty, high-protein, and natural meatless options in grocery stores in the United States.
- They now make artisanal paneer using high-quality organic milk from family-owned dairies in Northern California.
- Sach’s original and flavored paneers are made without stabilizers or additives; just milk, vinegar, salt, and flavorings.
