This limited-edition selection from Rogue Creamery benefits from the season’s cooler, wetter climate, which makes the pastures lusher and the cow’s milk richer. A complex cheese, its paste is fudgy and rich. Each wheel is wrapped in syrah grape leaves soaked in pear spirits, imparting a ripe, bright flavor into the cheese. Notes of vanilla, truffle, and fig mingle with the traditional piquancy of blue. Slice and top with Black Cherry Confit for some sweet balance.
