A California original, Cypress Grove Humboldt Fog was one of the first cheeses to popularize goat’s milk among American cheese-eaters. Built almost like a layer cake, it’s creamy, cakey, and gooey with a distinct ribbon of edible vegetable ash in the center. Try pairing it with a dollop of Continental White Gold Honey and Murray's Sea Salt Crackers to bring out its tangy flavors.

- American cheesemaking pioneer Mary Keehn first created this cheese in the early 1980s and named it after Pacific mists of its native Humboldt County, California.
- The cheese is defined by 4 distinct layers: its bloomy rind, oozy creamline, cake-like paste, and a thin layer of vegetable ash in the center.
- The cheese ripens from the outside in, as the cultivated mold used to create its rind starts breaking down the proteins in the paste, a gooey creamline develops under the rind.
- It pays tribute to French Morbier, with a delicate blue line of vegetable ash that separates its light, cakey layers.
